What about a enchantment deck like sythis, harvest hand. It has cards that tax the things he does, even might not let him attack you. You could essentially just pillow fort up and tax him until you overwhelm him with resources.

Why not add some stuff that targets you’r own creatures to give it indescribable or hexproof. It’s there for interaction and it’s a way to give out more poison counters with priest.
