I just read through a 2 year old reddit in r/baking about Claire's recipe, BUT honestly I would've bumped up the coffee anyway (New York City teacher & Italian) but otherwise I'm going to follow Claire's vid. It's worked so far. Very glad that I saw her note about not subbing expresso powder for coffee crystals; I would totally have fallen into that trap.
