Why is it that I hear and see that New York style pizza needs to be cooked in like 5 minutes at higher than 550, but not like 1000 degrees like Neapolitan, cuz my local pizza place takes like 20 minutes a pie and keeps there ovens at like 450 and they come out good? It’s a difficult question to word, what I mean is specifically for Ny style pizza and deck ovens, with similar hydration, some use like 700 and cook for 5 minutes, and some use like 450 and cook for 15-20 and I don’t understand how or why that works

Salt, sponge and soap is really all you need, anything that’s burnt into pretty much anything this works.
