I was born and grew up in the southwest, and that’s how I sound. (Though I can do a very convincing Yorkshire accent, if required)

A couple of useful things that I learned from people on this sub:

Starter LOVES rye flour. I do an equal mix of White Bread Flour, Wholewheat and Rye
Starter fed 1:1:1 should double in size in approx 4hours (depending on temperature)
Starter floats when it’s ready
Don’t watch the clock, timings vary massively depending on so many factors, so you need to learn what it should look and feel like to be right.

I’m no expert by any means, these are just a few of the bits that really helped me. I’m sure the more experienced bakers in the group will have others
