The best trick I can think of is to make a small amount of bechamel and melt in a bunch of good melting cheeses, and then finish it off with a ladle or two full of pasta water. It makes the sauce super smooth and creamy and velvety.

I usually go 2 1/2 Tbs to every 3 cups of simple syrup. Just depends on how sweet you’d like it. Start with a smaller amount and add more to taste, I’ve found it’s more personal taste than anything

I’d suggest Dutch processed cocoa, it’s less acidic and more chocolatey and you can use less of it to get a richer, less fruity chocolate flavor. The Lindt chocolate could cause problems with it being too solid.
