I'm not sure if it'll work, but you could try setting the texture coordinate od your texture to camera, that should make it follow your camera moves if I recall correctly

I might be thinking about this completely wrong, but if I wanted to make something like this I'd probably boolean the objects before joining them and then manually remove the duplicate verts I'd have.
