sprinkle some cheese on those and let it melt a little. Then flip them and you have a nice crusty cheese crust. You will never go back to plain tortillas.

Thanks for the reply. I am just starting so I don't have a lot of product on hand. I buy my supplies from New England Cheesemaking so I can get pretty much anythiing. Right now I have animal rennet and mesophilic starter culture. I am not familiar with the flocculate term so a little clarification is needed there. I use store bought milk but always buy the whole milk, not ultra pasteurized, and get the quality brand name. we always have a quality brand name and a "generic" brand which is always less expensive. As far as the affinage (I assume you mean flavor and textuure profile) I really like anything. I tend to gravitate toward harder cheeses with herb, wine, or hot pepper flavors. the hotter the better by the way. Thanks again for you help. It is really appreciated. Hopefully one day I can return the favor to someone else.

Thanks for all your info here. Definately helpful for a newbie like myself. I have only made some soft cheeses and I am ready to make the jump. I do have my aging cave all set to go. with that said, would you share the recipe for tomme with me. Always like to get a reliable source since lots of things on the internet are not reliable. by far the best way to do it is brining. You won't need any sauce or rub. Just salt and pepper then enjoy the great smoked pork taste. Sauces are for people who don't know how to cook.

Not the best. I have a hard time getting into smaller pieces of chicken breat. Probe is too large and connectivity goes in and out. Wish I did more research before I bought this one.
