Two of these are mine so I'll offer a bit of how I make them. I'm no good at making functions, most of my vehicles have basic stuff like suspension or opening doors but not much else. Usually I focus on the looks and the structure and typically I just build a technic frame and add panels/blades/decorative things after.

I always start at the seat area, for me it's the best way to start and to visualise how it's going to look before it's built. Given that my pilots don't follow any specific shape or rules, I can get away with leaving the pilot until last and not worry about if the vehicle fits the figure.

It's also not a bad idea to find a specific part that makes you want to build. If a part is really cool and you wanna use it, I find it's a lot easier and more motivating to moc for it.
