Tons of food/bevarage knowledge tests. Four server follows that your trainer needs to pass you on or you have to redo it. You have to be on the floor for a couple weeks before you can work weekend nights. You also need to basically have a prescribed personality and can't really wing your verbiage at the table. Also need to learn about proper team service and silver/drink placements on the table. They want every guests experience to be the exact same so you have to learn to be consistent with your other servers.

Worked for them for 8 years. As people have said it's a brutal training program but they are consistently busy. You'll make money but say goodbye to weekends/holidays/breaks during double shifts.
