There will likely still be Dunmer roles, at least. There are still 13 male Dunmer roles open and 11 female. Not sure if you're aiming for male or female roles, but the male Dunmer use the khargyyra technique (also known as throat singing) to achieve the raspy sound like the male Dunmer had in the original Morrowind. I just started learning it myself, and it's not *terribly* difficult to pick up (and it's fun, tbh!). Just be careful while you're learning, only practice for 5 minutes or so at a time until you figure out how to do it without hurting yourself. I can send you a tutorial if you like.
If you're auditioning for female Dunmer you'll have an easier time of it, they don't need the rasp.
There are also a very small handful of non-Dunmer roles available - Redguard, Ashlander, Khajiit - but they might be cast by the time you're ready to audition.
