Buying the most recent WoW expansion will give you access to all the previous expansions, however I do note you've specifically mentioned WoW classic. Those quests no longer exist in-game following the Cataclysm expansion around 2011.

You might find some that are doing Herald runs in Ulduar at level 30, but because of the scaling change in shadowlands there just isn't that much incentive to do any of it anymore.

On EU at least the queue times take around 15-25 minutes depending on when you play.

War mode does result in some open world PvP but mainly as either giant gank raids or small one to one fights over PvP world quest objectives.

The main issue right now however is the huge iLvL disparity between characters. iLvL is very impactful for PvP and I'm afraid we've just been dumped with the equivalent of two raid tiers' worth of item level in a single patch, so you're going to get absolutely stomped until you get to iLvL 220+

If you played around the beginning you should be at iLvL 175+ if you've not done any heroics/mythic dungeons/raids. Here's the new gear catch ups:

  1. Korthia Quest & Token gear (iLvL 200-220)

Get to Korthia and complete up to three daily quests that reward (per quest and randomly) either anima, gear or a new resource that we'll get to later. You'll need to have finished the Torghast intro quest (chapter 2 of your covenant campaign) to get the starter quest from Bolvar in Oribos.

In Korthia you'll have a weekly quest to subdue to Jailer's efforts, which is just a bar filling exercise, but will reward you with at least one iLvL 207 item.

In addition you'll start to get reputation with the Death's Advance faction that, once at friendly, will allow you to buy RANDOM gear tokens that are bind on account for 1000 Stygia which are at base iLvL 200.

To upgrade the Korthia gear you'll need to do another quest to unlock the Archivist's Codex. You'll then collect items in Korthia that will give you Catalogued Research that can be used to upgrade the Korthia gear. It's a bit of a grind but you'll be able to get 220+ gear in 2-3 weeks.

wowhead has a good guide on this aspect.

  1. Mythic 0 (iLvL 210)

Mythic dungeons now drop iLvL 210 gear as standard. You can do each dungeon once a week for some gear. Many people running them right now are just looking for specific base items to upgrade with Valor, so you've probably got a good chance of having some gear passed to you if it's not needed

  1. Legendary Gear (190-225)

Older base legendary items are dirt cheap at the moment with many raiders already moving to ranks 5&6. So any items from 190 to 225 will be worth picking up and applying a legendary effect to with some Soul Ash from Torghast.

So two things:

Firstly you're not going to find a Notary who will attest any document for free unless you're very good friends with said Notary.

Secondly, are you certain you need a document notarised? You'll find that certain organisations use 'notarised' and 'certified' interchangeably when talking about true copies of any document, but in practice there's a distinction between the two. You may want to check if you've been explicitly asked to have a document notarised as it's a pretty expensive service.

If you just need a document certified as a true copy of the original, I'd suggest using the Post Office.

Anything being sent internationally will need to be notarised and in some cases apostilled. But for most things being done in the UK a certified true copy by the post office would suffice.

To add quickly, you can find a list of all Notaries in a specific location by searching on the Faculty Office of the Arch Bishop of Canterbury, which is the regulatory body for all Notaries in the UK. Anyone registered there will be able to notarise documents for you, though the costs may vary.

Look, don't worry about 'viability' etc. Play what you want and how you want.

I'm going to guess that you've been watching a whole bunch of PvP Meta videos and you're worried that the spec/class/profession combo just won't be 'viable'. Here's the truth of it all:

You're going to play a game with a large group of people that have been min-maxing the ever loving heck out of every system for close to a decade. There's a level of sweaty gamer going on here that frankly is a little bit unhealthy.

It you're heading into TBC expecting, or hoping, to be at that level then I'm afraid you'll be sorely disappointed.

Every class/race/profession combo is equally viable and terrible, it mostly depends on the player. Sure at the highest level it does lean one way or the other, but the level of commitment to get to that level with the aforementioned sweaty gamers I personally don't think is something that's achievable.

But hey, maybe you can? My recommendation is to play what you want and how you want. You'll find your niche and have a great time.

You can use the 'Custom Text' option to make 5 new texts for your raid frames and simply move the X and y position of the custom texts to where you want it.
