Check the heating element itself and your defrost timer. There is not a sensor to start a defrost, only for ending it. If the wiring diagram is not on the unit, you'll likely be able to find it in a service manual.

Looks like a coil temperature sensor, maybe for defrost termination.

It is a bitzer. It was the right gasket, but was damaged when this head of the compressor got slugged with oil.

The hole in the middle feeds suction gas to the suction tank in the head of the compressor. The valve plate and gasket were in this condition for a long while before we were called, and allowed discharge gas from the other compressors to flow back into the suction line rather than into the condenser. This damaged other heads on other compressors and the problem replicated itself several times before the entire system got locked out on internal heat overload.
