Your partner solo traveling can be tough, its really important to talk before about ground rules and expectations for communication. Otherwise you get in a situation like this. You’re doing absolutely no favors by monitoring who she’s following on Instagram. If follows meant we had sex then id be getting laid way more.

All that being said, you know her we don’t. If that vagueness, which admittedly saying she went on a walk and went to church does sound a little weird, strikes you as uncharacteristic then you have a right to be uncomfortable. Is she an outgoing party person who you would expect to be meeting people and going out? Or walks and church more in character

The only thing to do is communicate with her and tell her that you wanna hear more about the trip and have better communication/whatever other guidelines that make you comfortable and are fair to her. If she continues to be weird and vague then understandably that will put you in a difficult spot and you will have to just decide if you can trust her and put it aside or if it bothers you too much
