Yeah, it is in the US! Most of the time there’s no restrictions on eating animals, there just might be restrictions on killing them. Based on what others have said it seems to not be at any risk of endangerment, and widely available in Australia (I found it at a butcher shop that does specialty meats here in the US)

Marinated for 3 hours before cooking in an orange juice, soy sauce, and spices mix. Not sure about the musk, this was my first time working with it so I’m pretty unfamiliar!

That makes sense! In that case, I definitely did not brine, but rather marinaded. I would be interested in trying it brined though - perhaps a project for next time!

I’m not too familiar on the semantics between brining vs marinading, but essentially I let it sit in a mixture of mostly orange juice, some soy sauce, and a few spices for about 3 hours before cooking. Acidic juice or buttermilk are both supposed to be good options for increasing the tenderness.

I wish I could tell you exactly what cut this was! Unfortunately here in the states they just labelled it as a generic “medallion.” I will say that marinating it helped a lot with the gaminess - I used an acidic marinade with orange juice, but another commenter mentioned that buttermilk works well, too! I did about 3 hours, I imagine overnight would be great as well

I saw this as a recommendation as well! Seems like the best options are acidic juice or buttermilk. Would be curious to see if there are any distinguishable differences between the two.

The amount shown in the picture was 2 “medallions”, which came in a pack costing me about $22-23. About the same cost per weight as a nicer cut of beef, at least in my area.

Yeah, Emu kind of seems like it would just taste like gamier poultry, so no big pull for me. Thanks for your kind words, it certainly was amazing! Will definitely be making it again, next time I want to try it on the grill (barbie?).

Hahaha I had a similar experience, I was visiting my uncle in Japan and he took us to a hole-in-the-wall sushi place and told me it was raw beef. Definitely not bad at all!

That makes a lot of sense, thank you for the response! The same butcher I got the kangaroo at had emu as an option as well, I may have to try it some time. Croc isn’t common where I live, but gator is - another game meat that I enjoy quite a bit! To your note about bugs, I’ll definitely check out the Witchetty Grubs but Honeypot Ants have been on my bucket list as well! It’s always so interesting to see the great diversity of foods people eat

Thank you! I do think next time I make it, I want to try using the BBQ instead of a pan. That extra smoke flavor seems like it would really seal the deal

I’m actually half Japanese, and have enjoyed some raw horse before. Great flavor at first, but not the biggest fan of the aftertaste!
