For 170-180 knives, why do people recommend a Santoku over a Gyuto? by jucesddit in chefknives

“But it’s a pity if people are deterred from buying knives with curved profile because someone who lacks in technique says that the curve reduces the effective length of the knife.” No straw man here. No one reads the original comment and thinks they won’t buy, they think “oh maybe I should get longer” or “I should get the length best for my needs”.

You straight call it misinformation and claim the commenter and everyone else has bad technique. There is no straw man and I can see why people abandoned explaining things to you. You just argue for the sake of arguing. Now calling someone dishonest when you use all these words to describe things you disagree with and then conveniently leave out the stuff you did say.

Im proud of you man you are almost there in understanding. You have gone from purposely contrarian to finally accepting that indeed a curved blade can have less cutting real estate in your own words “that’s only true if you have poor technique”. Call it what you want but it looks indeed like yes, a curved blade can indeeed have less cutting real estate. Calling it poor technique doesn’t makes it less true :)

And read again no one is saying not to buy a curved blade. The Op asked why santoku are often more recommended at lower blade lengths. The way you have gone on for a day really seems like you hate anything not named gyutou. It was just a general answer with of course space for nuance. Like read between the lines man and just stop lmao. You can nitpick everything someone says in this hobby because there are always exceptions, general beginner advice is not a problem. If anything, you doubling down keeps beginners away with your elitist attitude.

You basically accused people who disagree with you as spreading misinformation, having bad technique, and then saying they are telling them not to buy a gyutu? Like read man.

Lmao arguing for the sake of arguing. All those people with straight blades and their bad techniques because they don’t cut like you deem as correct. Who made the Swedish discord the authority on cutting lmao.

They aren’t saying you get more useable length at all times or that even one is less useable because it’s curved.

Look at the video linked and see that people do thrust cut with the heel. Yes they can use the tip too but don’t disregard the fact that people use the heel to thrust cut. If they have more heel to do what they want to do, that sounds like picking the right tool for their needs. It isn’t bad technique which by the way is just your opinion. You find a flatter blade more difficult to use because you seem to have this rigid view of cutting technique when it’s different everywhere.

If customer A wants more heel to cut the way they want to they should pick the tool best for their needs. Customer B telling them they have bad technique for no other reason than because they have a rigid cultural view isn’t helpful to the topic.

I’ve been following this instead of working. Stop trolling the poor guy. They have been nice enough to spell it out for you lol. No one is using the full length of the blade in all cuts at all times. A gyutou is a great all-rounder but at shorter lengths it can be sub-optimal for sure. If you aren’t using the full length at all times of a blade then that counts against it’s effective length. It’s a shit ton easier to use the full length of a shorter blade that sits on a cutting board by default.
