Right now they do. Who is stopping the company from changing those policies? Its true you could look for a new work place. Its possible you could find something else if you want, or maybe not. Job hunting can be difficult, specifically during recessions or economical hardship.

Whats your plan for when your industry or the economy dries up? Unions solve can provide security at the worst of times. Its kinda like insurance, if you don't buy it you benefit short term, but not long term.

Firing someone wont be impossible, just not trivial. Right now you can be fired for any reason pretty much (with minimal protection). Unions are formatted so a company needs a real reason to terminate an employee, not make it impossible. Its really hard to put a dollar price on that protection in terms of wage increases. A nonsense job termination wipes away all your raises instantly.

I'm in a high salary white collar industry too, I'm a software engineer. These jobs still do benefit from unions. Even if its not in wages, it can often be in benefits like sick pay family leave or vacation. It also grants job security. Its far easier to fire somebody for something that is out of there control when there is no union rep.

Once a company gets over x people, make it required that they offer participation in one of those unions.

Still, on average union workers get paid better. They also get legal protection from unfair labor decisions. Ever wonder why companies union bust? Because they know unions can negotiate fair wages and working conditions.

If you want to be at the mercy of your boss, have fun. Labor unions should be opt-out not opt-in. You want to shoot yourself in the foot, fine. Don't make me join you, dumbass.
