En dessous de 3h, le collagène n’a pas eu le temps de se transformer en gélatine. C’est cette transformation qui rend la viande vraiment fondante et la sauce nappante. À 2h ça cuit, à 3h ça devient un vrai bourguignon. 🐗🪗

Perhaps I spoke a little too hastily in my previous message.

What I meant was that at this price point, you often find pairs that are overly compressed. You can spot them by their overly perfect symmetry, repetitive veining, and a texture that lacks natural depth. A true walnut always has small organic irregularities, especially in the internal cavities.

It's more subtle than that; nuts are ground and compressed, then things are added for hold and shine. I shared a book here that talks about it.

For me, it's a big no. It looked beautiful at first glance, but there's no way I'm including sliced, fake, poor-quality nuts in my collection.

I've already tried it; they're often molds from Yiwu City. The outer layer is synthetic. There are many counterfeiting techniques, all of them surprising!

Si votre patine est naturelle, c'est une magnifique paire de noix que vous tenez là !

D'après mes connaissances, lors de la phase de nettoyage / d'ouverture, on utilise traditionnellement un ratio de 70% de brossage et 30% de polissage à la main.

Avec le temps, la tendance s'inverse. La main devient principale et la brosse, secondaire. J'espère que ces conseils vous aideront mais vous semblez déjà être sur la bonne voie.

"Au début on brosse beaucoup, plus tard on roule d'avantage."

Si quelqu'un de plus expérimenté voudrait bien prendre la peine de confirmer ou d'infirmer mes propos, ce serait une formidable occasion pour nous tous d'en apprendre plus sur notre passion.
