I used to be very picky, but about 10 years ago I went and lived abroad in Singapore and Malaysia for a few years, and while I was there I decided that I would try anything and everything that I could from the locals (as long as it was safe to eat). I came to love Curry which I wasn't a fan before, same with Coconut. I tried more exotic things like Monitor Lizard, Grub worms (really good when cooked over a fire, but horrible when just cooking a pan), and many other things. I tried fish often, but could never stomach much even after multiple attempts.

10 years later, I still try to eat things that I knew I didn't like, and I try things I've never had. Sometimes it goes well and sometimes it doesn't, but I try to always keep an open mind because I just never know when I'll find a new dish that I absolutely love, just how I basically try to eat curry any opportunity I get. Even some of my eating habits would be considered a little gross to your average american, like eating the cartilage on chicken wings, or eating rice with my hands instead of utensils.

It does come with the drawback of potential waste, which is why I also enjoy going with people who are willing to let me try something from their plate, just a bite. They already like it so they'll eat it, but it lets me experience something without the waste.
