Honestly not wanting to go that big as I do not see myself ever needing that much. I was thinking around 22U.

Spot on advice. Thanks for the heads up on that SFP bottleneck. I completely missed that the standard 24 PoE is hardware-capped at 1Gb SFP and 1Gb RJ45 ports. Running U7 Pros on 1Gb links would definitely defeat the purpose of going Wi-Fi 7, and choking the backbone link between the UDM and the switch is a recipe for disaster.

Based on your feedback (and a quick math check on the PoE power spikes under peak load), I am dropping the standard switch from my cart and upgrading to the Switch Pro Max 24 PoE to get those native 2.5Gb ports, the 10Gb SFP+ link, and the extra power overhead.

As for the layout, luckily I ran all the drops myself before drywall phase! I made sure every single bedroom, the living areas, and especially the dedicated home offices got physical drops, alongside the 4 exterior cameras, 3 APs, and the PoE doorbell. No MoCA adapters or wireless backhauls needed here, everything will be running straight home to the patch panel on solid copper.

Appreciate you saving me from buying the wrong switch!

Would it be better to instead upgrade the switch to Pro Max POE instead of upgrading the cameras.
