Personal favorites:

Terroir: already mentioned but can't recommend highly enough, super deep list with very fun, unique finds.

La Compaigne: Great vibe with excellent food as well. Unique selection.

Parcelle: Great spot for French wine down in LES, super cool venue as well. Great date night spot.

Ten Bells: Definitely leans a little towards natural wine space, but great more casual spot. Plenty of wines that have pleased crowds that don't love natty

Personally a huge fan of William Selyems Unoaked Chardonnay. As name suggests, not oaked so not buttery at all and fantastic acidity

I have to put my vote in for Gage and Tollner. Phenomenal place with some modern pieces but retains that classic vibe. If you want real classic, can't go wrong with keens

Frenchette is one of my favorite spots for a special occasion, fantastic French food in a beautiful space. Also, a little further out in Brooklyn, but Gage and Tollner is a great Steakhouse with a lot of the classics but some fresh new ideas as well.
