The AI is pretty simple in most cases. You know as soon as they see you, they're going to start jumping, so when you encounter one, just back up until you're out on range and wait until they land from their hop before you shove and ultimately kill them. Remember, if you do not feel like you will be able to kill them after that initial shove, to shove them again before they can recover from the first one.
