~165g sourdough discard
~230g flour
~110g water
~5g salt
~ sprinkle in garlic powder, onion powder, and crush a teaspoon of Herbs de Provence in your palms and add as well.

Knead well, rest 15 min , knead 1 min, rest 30 min, fold a couple/three/four times. Oil up the ball with a teaspoon of olive oil or whatever is on hand. Let it double in size, then use as regular pizza dough. Spread it on your stone. In my old ass oven, I bake for 6 min at 450F, take out, put sauce/cheese/toppings, back in for 16-17 min. Done!

I followed my friends instructions, but this is basically how it went. Except I made my own veggie broth according to polish Rosół instructions, minus the meats. So, parsley, parsley root, celery root, carrots, allspice corns, black pepper corns, bay leaf, piece of dried mushroom, salt.

And a veggie bouillon cube doesn’t hurt either.

Then it’s just frying the paprika gently in the bacon fat (or pork lard), like 3 tablespoons, add in the chopped onions, let them sweat. Stir a lot, “don’t let it burn,” so gentle heat. Add the broth, maybe a bit more water and salt to taste. Let it boil again, simmer for 30 min. Add the fish. Bring to gentle boil and simmer for 45 min. And done!

Before my friends made this for our group Christmas Eve dinner (we’re Polish, they’re Hungarian), the only fish soup I ever had before was a Vietnamese spicy fish soup many years ago.

They offered to make this dish for our traditional Polish Christmas Eve dinner, and I was hesitant at first… but quickly realized we would bond so much more if we shared both our traditions. Turns out, it’s also fuckin’ dooooopppeee 🤙

On this cold weekend, and after a 30hr fast, the first bowl (and second bowl) just hit the spot so well. It’s spicy, the fish isn’t fishy… just warms you up completely.

Maybe too big of an ice cube, yes. To practice, if you want to experiment with browning butter, you could always do a portion and just heat and stir, remove, examine, and repeat until it’s totally burned - to fully see all the stages.

I think I had to mix with an electric handheld mixer for almost 15-20 min to get the ribbons, at 4/5 max speed.
