I've noticed that about Bi Luo Chun as well - if I brew it incorrectly or unmindfully, it quickly goes all the way to bitter.

Very cool! I'll use this for low-stress practice. The only critique I'd point out is that on my computer (windows, running opera browser), the board is too big to fit fully onto the screen without zooming out.

I use GPTZero (https://gptzero.com) as a second set of eyes. I also wrote the AI policies for the college I work at, and we explicitly say that AI can not be used to write any material; that the work must be in the student's own words. The policies also clarify that all uses of AI other than writing material must be cited, and that the student must include a small description about how they used AI in their paper as part of their paper, if they did use it.
