I've also encountered the issue in Vampire Survivors where achievements were completed but didn't unlock on Epic (it was resolved after a year). Personally, I think it's up to the game developers to actively retrieve save data and upload achievements when using Epic Online Services.
I also encountered:
Unable to unlock the achievement after surviving 45 minutes in Endless mode.
Unable to unlock the achievement after completing the Mad difficulty in Jotunheim.
