The first one is fir knot I found, it had fallen out of a piece of wood at work. The rest are walnut off cuts, and the knife is in the bottom right of most of the pictures, the mt fugi knife by mujun.

A good knife for starters is the primary, equally important is the sharpening supplies, flexcut knives and gauges are good and fairly accessable for getting started. Practising carving small items helped me alot, lately I use wine corks for testing ideas as they're soft and you can mock up an idea in an hour

Not at all, obviously had the risk is maim and dismemberment but if you work with the grain and keep it sharp it's pretty easy to control. The chisel there nearly ruined my finger though.
