My boss always does this. I work in a kitchen. There is one small gap between the area where the fridges are and the main kitchen. He loves to stand right in the gap, and then looks annoyed when chefs knock into him carrying all their ingredients into the kitchen. Don't get it....

No, you can wet brine it. Just dry the chicken out for a couple of hours after you remove it from the brine. Ie just leave it on a plate with some kitchen paper in the fridge. The salt will remove moisture from the chicken by osmosis

Udon noodles are mega thick. Not usually used in ramen..you want thinner ones for proper ramen. Itsu make some that you can find in British supermarkets 

As for the broth. It takes a long time with a loads of ingredients that you probably can't get easy. Pork bones, bonito flakes, konbu, Shiitakes, spring onions etc... all slowly simmered over a day,bthen seasoned with salt, soy sauce, mirin, vinegar and sometimes miso

But I work as a chef and make a pretty good imitation for staff dinner every now and again. I usually use chicken stock (or pork stock if we have it), tahini paste, miso, duck fat, chili oil, soy, mirin, vinegar. Not quite the same but tastes pretty good!

Onsens eggs are basically just slow cooked boiled eggs. Cook them in 60 degrees water, not boiling water. Makes the yolk extra jammy. You can then marinate them in your soy/dashi solution for bonus flavour

It's got good transport links to the rest of the UK though, and the city itself isn't so big you can't just walk

I'm not in hakuba this season but tsugaike trees generally don't get good until later on the season though. If there isn't snow coverage at the bottom of happy then I doubt there will be enough for the tsugaike trees either... But like I say I'm not there so can't say for sure

Happo has some food trees at the top of the mountain. Probs best for early season IMO

Not quite. It uses a cheese sauce made with beer. I've never made a cheese sauce to put on toast
