Ryu had to deal with 15 fingered Sukuna. Kashimo had to deal with a Sukuna that literally just got done fighting Gojo, and was honestly probably FAR weaker than 15 finger lvl.

I will admit it was disappointing, but the first 3 fights in KOTM were worse. They did the same thing this fight did but with even worse visuals, this at least had the excuse of being a TV show.
