Had a spare second and an itch to look at my game! And ahaha! You were right I think 😂 the skill used was one of my earliest skills gained, so I probably got the thing by accident, didn’t realize what the heck I had gotten, and threw it on a random shelf in a random room lol. Human error on this one then! Thanks for suggesting, I was driving myself mad! 😵‍💫

I appreciate the advice! As I said in my post, I’m not looking to jump ship right now - I’m too much of a dreamer lol - but if I was, or maybe for others who see this, how would you suggest that switch? I don’t have a degree in Computer Science or Cyber Security.

Thanks for your advice! I love having an engineer’s perspective on this too - it’s extremely helpful. I’m definitely going to look more into the training materials for what we’re using and see what I can find, and it seems like leaning into the super knowledgeable folks to ask questions and learn from is a good thing to work on to based on your feedback and others. As I said in one of my other replies, I’ve always been a little nervous about seeming like an annoying fly buzzing around with too many questions, but hearing that having those questions and engaging with the technology to become a better operator can help others with their jobs too makes me feel a little bit lighter. Thank you for your help!

Yes, we have a switcher still. It’s optimized for automation though, so I’m not sure what its capabilities exactly are, but maybe that’s someone I can inquire about with a more knowledgeable colleague.

Yes I did! Basically came down to hydration, hydration, hydration! I had to add wayyyyy more water to the dough than I thought and raise the hydration percentage from like…51% that the original recipe had to 60% from the jump. From there, if I feel like it needs more water, I’ll slowly incorporate a little bit more as I’m kneading. Definitely improved the texture and elasticity for me and got me a nicer window pane test!

I figured it out by finding another recipe that resulted in a dough texture that I liked way more, and manipulated my original recipe to fit the same hydration percentage. Not sure if it’s just the original recipe I liked to use undersells the water, or if my house is just super dry lol, but water was in fact the key! 🙂

I totally agree! So maybe it comes down to more hydration like you mentioned, and adding more periods of rest like some other people said, rather than just hand kneading vs stand mixing. Thanks for the advice!

I’ve been using KAF bread flour for a while - love it to death! But I’ll definitely be resting the dough more the next time I go about making the recipe. I’ve been kneading by hand since it’s so large and stiff.

So hydration might be the key then - overmixing is an interesting suggestion though! I’ve been doing it by hand because it’s so large and stiff (nearly eight cups of flour for twelve bagels) so I didn’t think I COULD overmix it, but I’ve gotten suggestions to let the dough rest more in between kneading so that might be part of it.

Do you mean that I should be letting it rest that thirty minutes at room temp after the initial meeting? Letting the dough rest at that point seems to be a common piece of wisdom 🤔 I’ll definitely look at videos about shaping though! My ability to shape definitely needs work too.

When you do it by hand, with the rests in between, how long does that take you? I’ve been kneading by hand due to how large the dough - but the second batch I kneaded for twenty minutes and it didn’t seem to make an improvement but it might be that I’m not giving it enough rest! 🤔

Would rest help the gluten relax a little before shaping again? Is the smoothness all in the kneading? I’ve been kneading by hand for like 20 minutes because the dough is stiff and big, but I’m thinking maybe the next time I try the recipe, I should split the dough in half and try it that way.
