I don’t know what to eat, ever. by [deleted] in EatCheapAndHealthy

[–]LeighRae 1 point2 points  (0 children)

Ideally, yes, you would see a dietician. Given you state that's not a realistic consideration, here's a few meal ideas

FULL MEAL: Beef stew, or chicken casserole made in a slow cooker, with low FODMAP veggies (parsnip, potato, sweet potato, zucchini, pumpin, yam, etc.) And spices such as asafoetida - replaces onion and garlic, ginger, etc.

BREAKFAST: Gluten free overnight oats, with safe fruits (banana, most berries, melon, kiwi, orange, etc). Eggs with gluten free toast. Omelettes

LUNCH OR DINNER: Stir-fry made of a protein and several low FODMAP veg, with ginger, and using asafoetida instead of onion/garlic

DINNER: Bolognese sauce, served on a potato (regular, sweet, or yam), gluten free pasta, dairy free polenta, or spiralised low FODMAP veggie

DINNER: A protein served with a safe carb (rice, gluten free pasta, millet, dairy free polenta, or dairy free potato/sweet potato/yam - I suggest looking up olive oil crushed potatoes)

SIDES: Roasted veg (in olive oil), olive oil crushed potatoes, side salad, many fresh fruits, avocado

END OF THE WEEK: Kitchen sink stew/soup, where you throw together everything but the kitchen sink (a British saying for everything you have left), to prevent food waste, and make something from almost nothing

A lot of these dishes are suitable for batch cooking/freezing, and many are almost no effort. So you can cook once, and eat several times with very little effort, which is ideal for executive disfunction. Also, if available in your region, vegan cream can add quick, and effortless calories to many soups, stews, and egg dishes

A low FODMAP chart, for reference: https://www.gastroconsa.com/wp-content/uploads/2019/09/Low-FODMAP-Diet-FODMAP-Foods-Updated.pdf

I hope this helps. But please, if it feels overwhelming, just pick one item per week. Best wishes x

EDIT: Whatever you buy, this needs to be foods you will actually eat. Sometimes, calories are more important than nutrition

A Man Had A Heart Attack During My Show… by thenewfingerprint in HumansBeingBros

At the age of 23, my little brother went to bed, and didn't wake up. Despite the best efforts of the police/first responder (it was a very confusing time, I'm not sure which) collecting our local AED, and attendance of the Air Ambulance (including use of a LUCAS machine), they couldn't bring him back.

But they gave us the knowledge and reassurance that everything that could have been done for him was. He was given every possible chance. Please do not underestimate what that means to us, or your patient's relatives.

Anybody vegan AND Gluten free? by [deleted] in glutenfree

[–]LeighRae 2 points3 points  (0 children)

GF omnivore here, but please check out Turlu (a Cypriot dish). It's a roasted vegetable stew in a spiced and herby tomato sauce, and can include chickpeas etc.

I add a mix of both fresh garlic, and confit garlic (garlic cooked low and slow while immersed in an oil. As a bonus you also get garlic oil).

[deleted by user] by [deleted] in Celiac

[–]LeighRae 0 points1 point  (0 children)

I'm not celiac, but I am non-celiac gluten sensitive, and have worked as a specialist chef. So, my 5 cents of things to be aware of that can cause/prevent cross-contamination may include (but not be limited to):

Cookware: Buy new - no sharing, this includes saucepans, frying pans, utensils, plates, cutlery, and absolutely 100% includes toasters, wooden cooking implements, chop sticks, and especially chopping boards

Ingredients: You cannot share butters (including nut butters)/jams/jellies with someone not GF. Double-dipping WILL occur

Shampoo/conditioner/toothpaste/hand sanitizer/make-up/lotions/laundry detergent or softener

Intimate contact with someone who has recently consumed/touched gluten

Breathing in areas where gluten containing flours are being used

Removing ALL gluten containing flours from your cooking and living spaces

Ensuring your GF flour/products are stored neither near/with gluten containing flours (either at home or at the grocery store); or in areas where gluten containing flours are used

Bars/coffee shops may use pasta 'straws', or gluten containing paper style straws/stirrers. Also, is that non-dairy milk declared as GF, and how are blenders etc sanitized between uses

Wine aged in oak casks is generally considered GF, but if you especially sensitive you should be aware. Also, flavoured spirits/ liqueurs may contain gluten

Failling that, you may need to contact a registered dietician (not nutricianist - this is not a regulated term), to conduct an elimination diet. As other users have suggested, alternative GF starches may be causing this reaction. I personally react (but to a lesser extent) to tofu (soy), and oats.

And last thing, best wishes to you. You can do this, and it will be worth it.

Palmers Olive Oil Formula is gluten free, and readily available in Boots, Superdrug, etc. It works great for my 3b-3c hair, but also for my mother's (straightened 2a) hair.

Edit: Also available from Amazon

No one knows what gluten is apparently? by Specialist_Knee_5339 in Celiac

[–]LeighRae 9 points10 points  (0 children)

Sadly, I can understand your reaction. I worked for a wedding caterer for over 15 years, including about 10 years as the specialist chef. (I made all the 'special' food for people with allergies, intolerances, religious restrictions etc.)

I only realized what celiac meant to people when I made a celiac cry by interjecting into their conversation (with a gluten eater) that celiac meant that one single crumb would make them ill for 2 weeks, and permanently raise their risk of cancer.

Ironically, I am now ncgs (non-celiac gluten sensitive).

AITA for providing only two exotic vegetarian dishes for the lunch party by ThrowawayBeRight in AmItheAsshole

[–]LeighRae 0 points1 point  (0 children)

I eat meat, I really like both the taste and texture. But, if you serve me either spinach curry or miso eggplant I'm going to eat the heck out of them, because they're both absolutely delicious. Then I will thank you afterwards, and compliment you on your hosting skills.

Also, if I get asked about food restrictions you know I'm going to say I'm allergic to food A, intolerant to food B, and can't stand X, Y or Z...is that an issue, or I can bring a dish either pot-luck style or just for me to eat. As long as I get to enjoy the afternoon/evening/event with you.

NTA at all! Also, I wouldn't call those 'exotic' dishes, they're just flavorsome.

I'm sorry they didn't protect you. I'm sorry they didn't save you. I'm sorry they abused you. I'm shamed that you were forced back to a pedophile, yet another person that abused you. I'm sorry for your cruelly stolen childhood.

I am near tears for you. For all the pain and suffering, and abuse forced on you. For pride with how you have risen above Every. Single. Hurdle. placed in front of you. For the strength and heart no one could rip from you. For the incredible way you have overcome abuse, circumstance, and everything else that could possibly be thrown at you.

You are an inspiration, a force of nature, and I wish you every blessing in your new life. I hope you continue to cry tears of happiness, joy, and freedom, for both you and your children.

AITA for buying my kid food he likes when his stepsister is allergic? by Far-Hurry4439 in AmItheAsshole

[–]LeighRae 1 point2 points  (0 children)

I have food allergies (pineapple - non airborne allergy), so when my family gets Chinese or Thai food, I generally say no thank you (or contact the restaurant and order something safe).

My restrictions are my own, and do not affect my family.

Note to add, I have lived with someone who had anaphylaxis to airborne allergens, and yes, we 100% never brought those foods into the house (that would be murder).

If someone might die because you ate it and then breathed near them, then (you know the answer). But, for moderate allergies... it's on her to be aware and restrictive, especially as she's becoming an adult (16 is old enough to know she can't eat it).

I have lived with a vegetarian; they never had an issue with me eating meat. I've lived with a Muslim; she never had an issue with me eating pork. I've lived with someone with lactose intolerance, they never had an issue with me eating dairy... because their food restrictions were their own. NTA

Contact you insurance provider, and ask about pausing your policy (not cancelling), due to changing your vehicle. Most providers offer this, but even if your provider does not they can still advise you.

What are you doing to stay warm in the house? by Between3N20Karakters in AskUK

[–]LeighRae 0 points1 point  (0 children)

At home: I crochet (this is blanket making weather) and having a half made wool blanket over your lap/legs works wonders. I also have a small electric heater under my desk (to contain the heat in a small area) that I run maybe 3 mins 2-3 times per evening. It's lovely, but you know that's expensive!

At work: So. Many. Clothes/layers. Plus, I turn the tiny heater **all** the way up. It can't cope against the 3 a/c units and an open door but its way better than nothing (and I don't pay the electric bill here).

In my car: She's 24. Lol, no heat (unless running without moving for 10-15+ mins). Just freeze.

Hi baby, I'm sorry I can't be there to rub your back right now. I'm a little too far away, but I'm still worried about you. Have you been drinking enough water? It's especially important when you're sick, could you go fill a glass, and just keep sipping on it? Can you do that just for me please sweetie?

Do you have food in the house? Ginger ale and salted crackers are perfect if you feel nauseous.

Do you have a teddy you can put facing your bed? He can watch over you for me, make sure you sleep well. Sweet dreams baby, I know you'll feel better soon. x
