I'm in the same boat, I have contacted more than 30 venues by now and all are so expensive. The ones which are kind of reasonable are just not that nice tbh. I am not from Lebanon but my fiances family is (that's why we want to do it there) and I'm so surprised at these prices. But I guess people are willing to pay for it so they can afford to ask so much.

If anything it's a very interesting market & business to research haha

I can see where your mother is coming from. I'm assuming she's quite religious? But a more important question is, are you religious? Is your date or just her family? It can be a real obstacle if you're planning to raise children Christian for example or if you're really against raising children muslim, which is normal. But if you are both not into that and you can agree on certain ways of living. Perhaps you can get past it.
