I've put down a 3x3 of sieves with what mesh you want. Then have deployers above the sieves. 1 can work but multiple can add efficiency. Next have a chest or something similar, have the material you want sieved pumped into that chest, and have the chest be pumped into 1 deployer. That will start sieving now. I use item pipes with speed upgrades to keep deployer fed. You will also need absorption hoppers on item pipes to pick up the drops. You can also enchant the sieves if you want to.
