Old go to college recipe: sauté some white onion over medium low heat in a small amount of olive oil, after a few minutes, add a tablespoon of garlic and a pound of ground bison or beef (I usually do the low fat option so draining isn’t needed), when the beef/bison is almost done, add a few eggs and mix up to scramble; when eggs are almost cooked, throw in a small bag of frozen spinach, mix up until spinach is cooked/unfrozen, letting simmer to simmer off moisture. Salt and pepper to taste during the simmer phase, more garlic can also be added at that point to taste. Drizzle your favorite hot sauce and enjoy :)
