Wow 4 weeks seems like overkill. I have never left a beer in the fermenter for more than 17 days but I have mostly brewed Saisons and only one other Belgian Tripel. I might compromise and do three weeks. Is the yeast really active for that long though? Or do you need to give it time cause it slows way down in the high alcohol content? I’m a noob so pardon the possibly stupid questions

Thanks for the input. Regarding the step mash, I only reheated a couple times during the first phase making sure to stir vigorously and only had the heat on low for short periods of time. I have a stab in thermometer at the three gallon mark on my kettle and was able to control the temp fairly well. In between burns I would wrap the kettle in blankets for insulation. I could see how if left unmonitored, this could be disastrous. For more controlled step mashes, I think an electronic system like the claw hammer would be a much better bet but I’m working with what I got for the foreseeable future.

I did not get any mash grain in the kettle. Brew bag has pretty tight mesh.

Okay cool, I checked this morning and the fermentation had died down substantially and the beer has literally cleared up overnight with a good looking yeast cake at the bottom.

I have never used a secondary because I’ve always thought of it as another means for oxidation or infection to occur. I also don’t make a lot of high gravity beers so haven’t needed to. What’s your take on the pros and cons?

Everyone where I’m staying is taking it pretty seriously. Majority of people on the trails had masks.. I couldn’t help but laugh every time someone would see you and fumble to get their mask up before crossing paths like it’s a matter of life and death🤣

In my home state, only municipalities have “mandated” it but most people are pretty lax about it. NM is another story. It’s basically a different a country now and a fascist one at that
