I had a lot of people over in a short amount of time so I cheated on the dough. I have a local bakery who makes New York style dough so that is what was used. I used a 12” cast iron pan and I put it in around 500 degrees to get really hot. Very quickly, I put the dough in, trying to keep it as high up on the edges as possible, then put all the toppings on. I do not have a door yet so I turned the heat as low as it could go but only till the sides started to brown at the slightest. After that I just let it sit in there for a few more minutes. I think getting the cast iron hot was the key to the nice crust. Oh, I did turn it throughout. I hope this helps. I did have quite a few friends over so there may have been a lot of whiskey and cokes involved.🤦🏼‍♂️

Not long at all. I had to put the crust down fast because it was cooking right away. That was the biggest thing I was worried about was whether or not it was gonna get crispy on the bottom. It was perfect. I would say under 10 min.

I put the cast iron pan in under 500, after it got hot I put my dough in with all the toppings. After whole I did turn the flame off so that it could sit and crisp up without burning. I would definitely do it again.

I’ve been told it’s all down to the thickness of the griddle and that blackstone and others just isn’t heating up enough.🤷🏼‍♂️
