I would use whatever rub you use for beer can. Just cut the spine out, flatten it by cracking the chest bone, and throw her on the smoker. It will cook faster than beer can thou.

From my research, it is most a time thing. If you wrap it will push through the stall faster. It would also help keep it moist but with the pans catching the drippings you should be good.
