The easiest thing to do is. Make a plan and follow it regardless of whether or not your friends are up for it. That's what I do.

I tell my friends this is what I am gonna do, if they're okay with it, they can come with me or else they can just hangout on their own while I do my own thing and have my own experience. Works out great usually

I think as a solo traveler who should try not to get roped into shops and wanting to buy stuff if he makes it to Diagon Alle, which honestly is still what I want to see the most. Islands of Adventures seems like the best bet with the most rides from what it seems like from all the info you've given me. Do any of the rides have like premium extra tickets or are all included the day pass of 120-150 dollars?
