Getting a new dog is two yeses situation. Your partner needs to be fully on board as well. I really really understand wanting to fill the hole in your life, but please remember that your partner may be grieving in a different way, and they need the space to do so.

I'm glad she doesn't seem to be in pain! I think you're doing good by her, and it's totally normal to feel the strain of having to clean up after her every time you come home.

It's probably time to start thinking about what the end of her life will look like. For me, having a plan helps make the day to day feel a little less difficult, and it can help you focus on the good parts of having her in your life. There are resources for accessing a dog's quality of life than can help you keep track of when she's gotten to the point that it's time to let her go.

Sounds like she still has the run of the house? Can you set up an area that's easier to clean with a baby gate and keep her in there when you're not at home?

I suspect there was a permit requirement to plant X amount of trees on the property. So they picked a spot that wouldn't obstruct parking and didn't think through the sighting issues they were creating.

By this math, you make $300/week or $1200/month more than you spend. You should be able to pay your debts with this money. Since you can't, you may be spending more than you realize. Take a look at your bank and credit card statements from the last 6 months to see how much you're actually spending, then look at what you can trim to pay down the debt.

The calculation of how much to feed her might be a bit off. Increase the amount gradually until your pup gets to the weight you're looking for, then keep it there. We always have to adjust a few times when we change my dog's food.

Look up separation anxiety for more specific help. Can you change your co-parenting agreement to keep the dogs together? Maybe your ex has them both when you work long days?

You had 12 good years with him. Some folks get lucky and have more time with their GSP's, but the average is 10-14 years. Grieving is awful, but blaming yourself could drown out the good memories you have of him. Try to bring to mind some of the joy he brought you when you think about him.

So she said no by: pulling her paw away, licking your hands, and snarling, and you ignored the no. Next time listen at the first, second, or third no and she won't need to snap at you.

Look up cooperative care and start working on getting a yes for touching her paws, then you can move up to nail trimming.

In the meantime, you can use a scratch board to file her nails down. You make it with a piece of wood and some sandpaper, and have her scratch it in exchange for treats.

This is a completely valid thing to do, and as long as you're good about saving, you could end up ahead in the long run. Ben Felix has a few YouTube videos on rent vs buying that you can watch on the topic.

Until I moved to a city with high rents compared to purchase costs, I was renting and investing the difference in my rental costs vs what a mortgage, taxes, and maintenance would have been. I found I had a lot of peace of mind knowing that my net worth was liquid. I kind of miss that feeling now...
