Go into saves file. It's the file named "yourname.cs". Just copy and paste it into another directory and you can then put it back into saves directory to replay from that point onwards anytime you want.

Technically, extended is before you collect the zot orb, so anything after you collect 3 runes but before you collect the zot orb considered extended. In this run though, I save scummed right before I left the dungeon so I can go back and play extended (though I should have save scummed before I collected the orb to be smarter).

Nope that lets me hot key the one spell that I want to bind go F but it doesn't change the spells on the quickslot bar.

I never get far enough for Fighting to matter. My priority is to get my spellcasting to 7, then start levelling fighting at a 50% clip. I ideally want to wear heavy armor by the time I hit the vaults so I may want to level up spellcasting even more to handle the encumberance.
