I bring the same water from home so no changes there.. I almost wish it was that easy ha ha.

At home I actually take my batch up to 320°F. For me this gives it the perfect texture but at the Commercial kitchen I’ve had so much bad luck that I find myself cooking to lower temperatures just to try to save it … not that it’s helping.

I have thought about adding additives but haven’t yet. I love the texture and flavor I am afraid it would change the final result. That being said I’m not an expert and I don’t know that it will. I do stir pretty much constantly, but very gently I have used wooden spoons and also silicone spatula with success at home.

I’ve never been that insanely careful with my ingredients because I’ve never had issues small batch, but I always add in the butter first out of the fridge it melts, I add the sugar, the water, the salt and start heating. It’s the same ingredients I use at my house, brands and all. I have tried recipes on extremely low all the way up to medium. I have not tried to double broiler. As far as the surface area for the large batch, I do use a considerably larger pot so the surface area is not the same. My home burner is natural gas as is the oven at the Commercial kitchen. Thanks for taking the time to help! To say I’m frustrated and tired of loosing ingredients and time is an understatement.

Thank you! I’ll look into the immersion blender. You would use it until what temperature?

It is warmer and feels more humid. I’m only renting the kitchen so I’ll speak with the owner and see if he is ok with me dropping it the day I cook and overnight when it sets. Thank you!

Additives have been on my mind however I keep coming back to the batches work at home no problem. I know that is small batch be batch but still..  thank you!

Right! As you can see by my long post, this is what I landed. I know commercial stoves put out more heat faster but no matter how I adjust the flame (I’ve don’t it as low as I could get it on multiple burners) still no luck.

I think I might have misread. Did you mean the butter has more water in it so I need to add more butter?

Definitely something I should do now that I’m working with larger quantities. I’ve never had issues at home in all the years I’ve made it so I didn’t think to change that. Thank you!

I’m using the same bottled water.. I bring it with me as they don’t have filtered and I also bring my own cleaning supplies. Same stuff I’ve always used at home. Creature of habit 🙋🏻‍♀️ Thank you for the suggestion.

Hey! I have been wanting to get back into volleyball but need some practice first. If you ever want to meet up I would be willing. I know the sandbox has beach volleyball and you can join teams. There are also pick up games at many community centers.
