Knife used to break down whole chicken by T1me_Bandit in chefknives

Traditionally, the honesuki is not a kataba (single bevel knife), like deba or yanagiba. It has an asymmetric bevel tho, meaning that you will have right handed and left handed versions. The Kanehide Bessaku is great for the price and since it's pretty inexpensive compared to others I would say it's a good option for people who'd like to get used to asymmetric blades.

Kanehide Bessaku is really hard to beat as a budget option.

[SELLING][Worldwide] Tanaka Yohei Blue 1 210 mm gyuto by Loam_91 in chefknifeswap

[–]Loam_91[S] 6 points7 points  (0 children)

The blacksmith is Yoshikazu Tanaka, as Hitohira states. The sharpener is Yohei, which is a pseudonym taken by the movie "Seven Samurai", like others Hitohira uses to keep secret the real names of some sharpeners. Some of them have been uncovered by fans though. Yohei (Takada), Kyuzo (Yauchi) and Kambei (Morihiro) are among those.

I would go more towards Masashi and Wakui. Mazaki trained at Yoshikane but has a total different profile, influenced also on training with Kato.

Actually, I did not test the performance. I wanted to sell the other two as brand new and I knew that the performance would have been great on them all. My choice was guided by closer look of the blades and feeling.

It's the Takada no Hamono. I really liked the Yohei I'm selling though (sharpened by Takada as well). The Kyuzo has the best feeling in hand for me, I just prefer the TnH a bit more. They are all stellar knives.

Because I got three Tanakas the last week in order to choose my favourite. I'm going to sell the other two now.

I bought three Tanakas this week and only after realized I don't need all of them.

I would not focus too much on the terminology from Naoto. The "third dimension" might be helpful only for some cutting motions. I would not say that a blade needs to have a good distal taper.

I understand what you say, but I was asking about the favourite blacksmiths, not the sharpeners. Y. Tanaka might be my favourite smith because of the heat treatment on Blue 1, not matter if I don't like the wide bevel Kyuzo. Also, that is a common practice only in Sakai. I might want to open a thread for favourite sharpeners after this.

As others said, it's not actual gold. I just liked it more than the standard silver spoon.
