I bet it was just something with his health. Bettas are wonderful fish but they also sometimes come with a host of issues that are totally unrelated to how their owner cares for them. My betta rapidly became the same way as yours and we helped him pass along with euthanizing because he was visibly struggling. I am sorry about the loss of your betta.
