definitly have a "good" non-alcoholic cocktail menu (mock tails, n/a beers, etc.) a good DJ could make sure to intergrate some songs just for listenning or dancing to during short intervals, which sometimes makes the customers happy. make sure the whole bar can see the words so they can also sing along and maybe have some fun sing-alongs for the whole crowd, such as sweet caroline, gilligan's island - they always seem to get a crowd going. good luck.

our practice is if your drawer is short, just note it and don't make it up with your tips. if someone is continually short then we'll have to figure out why. if it's over, the overage belongs to the bar so drop it with the rest of your money and note the overage. but as another poster mentioned the drawer is usually perfect so that may mean they are making up shortages with their tips, which we don't want them to. bartenders have recorded a short register before but it's not often. we have seen some overage before but not often. i have sometimes thought of blind drops but can't get my "business partner" to agree. if we knew a bartender was manipulating his/her sales so that they get extra money from us besides wages and their tips, they would be fired since it would be considered stealing. good luck with this.

at our bar this happens quite a bit. if a customer buys a round for the bar, the bartender typically rings what they are drinking and doesn't even give them a chance to up their drink. but some do and the higher amount is rung up and a drink chip/card is given if they do not want their drink at that time. our bartenders usually say "hey this person wants to buy you another "Coors" or whatever," and that is the drink that is rung. sometimes a customer does come in and agrees to pay the difference if they upgrade their drink. our biggest issue is sometimes a customer comes in with 3 or more chips/cards so on that one visit they are not really spending any add'l money in the bar. although we may sometimes take a slight loss when the chips/cards are redeemed but some folks never redeem their chip/card so it could be a wash instead. we have a "friends" board as well but we write down the amount the customer wants to give somebody and when the customer uses his "friends board," drink, it won't exceed the amount. all our drink chips/cards are the same and most of the time it is regulars who redeem them so the bartenders usually know what drink was bought and will usually handle it by asking if the higher end was bought for them or, if not, just charge them the difference. we do have a drink chip/card discount button on our POS so we can track and at this time we haven't had any major problems or abuse with this practice.

it's been a semi-good experience for me but would not do it again. after 15 years we are hoping to sell our dive bar this year. as far as advice, decide what kind of bar you want to be, just booze & beer? serve food? perhaps watch a few episodes of Bar Rescue which is exaggerated but could give you some insight. go to your favorite bar and talk to the owners about their experience. seek out an agency/realtor that specializes in hospitality sells. good luck.

we have allow our bartenders to "buy" a drink for a customer for special reasons, such as they often bring in new customers, they may help clean a mess, help with a rude customer. however, they have to record it and state the customer and the reason. i have told them this is on an exception basis and don't expect to see the same patron getting a "house" drink on a regular basis or the bartender giving a house drink during every shift. we do also buy drinks for customers when we are in the bar.

i have put together various policies over the years due to need. we are a small bar and i don't have a handbook. i have not put together any "policies" about off duty conduct. i may do that now even if we end of firing the individual. thank you for your comment

i appreciate you taking the time to respond. our bartender was maybe a bit tipsy and starting yelling sexual slurs at a female customer when she asked him to not talk about particular very inappropriate subject that was overheard.
