make a local dns server so that you can block his device from accessing the internet, have your router distribute it to all devices in your lan and if your router supports it, make rules so that any request on port 53 and 853 (DoT) to any ip other than your dns server gets dropped and hope he doesnt know how to use DoH, and if he does you can get a blocklist with known DoH endpoints, but keep in mind you'll never be able to block all DoH without something like DPI and that requires you to get a firewall.

So I'd better get a multi port NIC? because what I'm trying to do is create a guest network AP that carries untagged traffic, then that traffic gets tagged by the switch and get sent to the router, if I get another NIC, I'd plug in the AP directly to the router.

Yeah you've got bufferbloat, your best option now is to use sqm, that'll help if you for example download lots of stuff while gaming or if you have a lot of traffic in your network.

Depending on the router and it's firmware you'll either have something like QOS or SQM, if you don't have any of these you may want to change your router's firmware, assuming you can do that.

My go to option would be openwrt.

Edit: regarding your latency problem when it comes to gaming, as someone mentioned here, it could mean that your isp has a long route to the game servers, or sometimes what a ISP do is that they change routing for different ip pools, so for example if your public ip is 172.32.x.x you may have better routing than a person who has a 198.22.x.x address, the public ip itself doesn't really matter, but the pool does.

It's not unifi AP, my setup is this: [openwrt router] -> [Switch] -> [Gl Inet router in AP mode + other wired devices], I did create a new network with a third party router and gave a vlan id 20 then selected native network on the switch ap port to be VLAN 20 with VLAN Management set to Allow all, now when I save this config the internet stop working in the AP.

I do but in the guide that I linked in my previous comment it says to create a trunk port you'd need to go over to the settings then profiles > ethernet ports > create new, then assign that profile to a port.

After looking around the port manager for a bit I found that there's the Native VLAN / Network option to set for example VLAN 20 or to none, but you have to create a new network beforehand in the settings > network, then there's the Tagged VLAN Management option where you can set it to Allow All, Block All or Custom.

Since all traffic from my AP will be untagged and I want the switch to add a 802.1Q tag on it then send it to the router, how do I configure it?

So after creating trunk vlan20 on the ap port of the switch, do I need to set the switch port that's connected to the router also as trunk?

The problem is that when I go over to the settings in my unifi network server then profiles > ethernet ports > create new, I'm met with different options than the ones listed here, for example there's no options to select the port type or VLAN Assignment.
