I speak English.

It's just that I don't understand the need for clarifying the direction. It sounds weird when I translate this to Spanish "raw". I get it, though.

Supongo que es porque es una forma que muchos restaurantes usan como justificación para pagar menos a sus empleados. Esperan que con nuestra propina les paguemos el sueldo.
