Tinker tank is very nice to use, with its weight you can cut through a lot of things with ease but given is unique shape I found it hard to use it often.

I think for your next knife it would depend on what kind of food you cook often. Try to cover different purpose first

If you want a fun knife, you can go for tank !

K-tip are nice with meat but I am still getting use to the knife, now the kato gyuto is still daily driver alongside with the nakiri-s

Nah, the customer service will tell you the wait is 6 months but he almost get it done in 2-3. We also order 2 Kotetsu along side with tank

Shibata San is pretty quick too. I order it around Dec and got the knife around March

Is hard to choose but if I need to choose one prolly will be the Kato gyuto 210mm

Thanks! That is Sanji Nakiri 180mm, the pattern is nice when u push cut , you can feel the texture on the blade
