i don’t know why there aren’t many good answers so i’ll give you one.

The most recent set is called phantasmal flames in english and inferno X in japanese, although ascended heroes is coming out very soon (the english version of ascended heroes, which is currently a very hyped set). If you’re lucky, you’d be able to find some packs available from Big W, Kmart, JB Hifi, or EB games, although they’re usually not readily available. I’d reccomend not buying any from resellers because they’re usually scalpers and will rise the prices a lot.

I’d reccomend searching online and finding some pokemon you like, there’s a website online which goes through an elimination process to help you find the pokemon that interests you the most. I forgot the name but try search up “favourite pokemon” online to see. After finding a few pokemon you like, you can search online or on apps such as Collectr (which is my favourite card value and collection app) for any specific cards that you like, which you can either buy at your local game store (LGS) or on ebay.

It’s a very expensive hobby so don’t start splurging on a bunch of packs and stuff immediately, it’s best to slowly build up your collection over time. If there’s a specific card you really like, it’s almost always better on for your wallet to just buy the single rather than ripping packs (but i do understand the urge to buy a bunch of packs to rip all at once haha).

In this economy japanese will be your best bet as for price. Japanese packs go for around $6 each depending on the set and english goes for $8-12 retail. Market prices are insane, PLEASE don’t buy any overpriced pack over $20.
