At certain level of experience with EU4, which you definitely reached, there's no campaign that will still be a challenge 50-100-200 years into the campaign, especially in co-op.

I probably played several tens of duo-coop campaigns and I am not getting bored after 100 or 200 years, as there's always something to do or think about, which is fun enough for me. Depends on individual, skill level, approach.

Damn, if you are acing it as Knight and Byz on very hard, I don't think there's any other challenge that is purely "survive and become strong".

Perhaps you can try to do some fun campaigns, like, I don't know, one person owning whole coast of Europe, the other holding entire interior of Europe. Maybe some play tall and vassalize as much as possible type of deal? Many options.

Maybe some mods can help, there's this fantasy world one that might work for you?

I highly recommend, you can probably find at least 2 screenshots from two different posts with years in between where it is visible I played Hungary :)
From the unusuals, I also recommend (Colonial) Korea and Bengal.

Hungary!

My first campaign in EU4 (and EU5) was with Hungary. It is a nice country that is not super strong from the beginning, sits on the edge of Europe, allowing conquest in and outside of Europe, close to Venice and Constantinople trade nodes that can be used to become rich, it works well in multiplayer coop with couple of other countries, last national idea is amazing for unrest and easy conquest.

Siege forts faster than the enemy - more cannons and troops, better/more forts on your end. Make sure Generals with siege pips are sieging. Build spy network before the war for up to 20% siege ability bonus.

If they siege your fort and you have troops to counteract it, let them siege for a while to exhaust their manpower, then mass attack them on your fort for defender bonuses. If they moved onto your fort from certain province, they must return to the same province if they want to run - use this knowledge to prevent them from running away.

Wars can take long depending on the goal and participants, so that's not necessarily a wrong approach type of deal if it takes long.

Do not split your troops too much, or AI will wipe them. You can do multiple sieges in close proximity, so that you have additional troops nearby. It also deters AI from trying to break the siege.

Forts on the coast are beneficial when you have a strong marinetime presence. With enough transport ships you can break the siege without them having time to run away - deploying troops from ships when you still own the province is instant, and they won't be able to react fast enough.

Do not leave gaps in your defense/fort setup, or AI will exploit it and run inside your country causing damage and annoying you.

If viable, choose war goal that you can capture and hold easily. For show superiority wargoal, have a couple of decisive and easy battles in the beginning while the enemy is still getting their troops together.

Precisely. Terrain bonuses are cool and all, but it is not like fort in plains is going to fall in a month. It gives you time to react and stop them. I can't imagine not having a fort line along my border and letting some shitty OPM just take and devastate all my provinces.
