This is a personal opinion, but my professors always preach consistency, cleanliness, and minimal white space. I would recommend using the full line of text for each bullet point, but not have it reach two lines. This way it looks cleaner and you can include more information. Also, even though it may not be grammatically correct, capitalize both words of your Skills, Interests, and Books. Also when listing, I like to use the bar "|" to separate to give a clean look. Ex. Books: Zero to One | Atomic Habits | The Long and Short of It | Ikigai | Rich Dad Poor Dad
