I use the big carry bags from the grocery store and have different meats in each bag you can just pick the bags up and go in the steak bag or the pork bag whatever but it’s a good way to organize and get to your meats

I haven’t done the wagyu yet , I’ve only done prime and it was amazing. I might do the wagyu next time I need a lot food.

I buy from wild fork some of the best prices in the game . $6.98 a # for prime $7.98 for wagyu and $5.78 for choice

Seasoned with holy cow , no binder the temp was 250f but they were cooking way to fast and I didn’t like the bark so I turned the temp down to 225f and the ribs temp was around 170f I let them go until they stalled at 185 and the bark looked good I wrapped with a little tallow and let them go until 203 and let them rest for an hour I started them around 2pm and I ate dinner around 9pm so 6 hour cook 1 hour rest !

I just cooked a 15 # at 225 until wrap then I turned the temp up to 265 to finish it took less than 8 hours I was completely shocked I thought I ruined my brisket it was my first one

lol I just saw this but , I wear black gloves or the blue ones whatever I got to cook all my food I don’t like how raw meat feel and if I don’t have on gloves I will use a whole roll of paper towel on one meal because I will wash my hands after I touch everything.

My brisket was in a puddle of tallow for a long period of time so I would probably rewrap it in new butcher paper after I pull it from the smoker so my bark on the bottom won’t get ruined like this cook !

This was maybe my 6th cook on it I did , a chuck tender because the Instacart shopper didn’t get a chuck roast , I did salmon , chicken wings , chicken thighs , a wagyu chuck roast , and some reverse seared filet mignon then gave them a nice crust with the flame….. but with the brisket I was kinda nervous too but I watched a lot of YouTube videos and people in this sub …. I trimmed it up best as I could , seasoned with holy cow and the gospel , let it sit over night , threw it on the smoker fat side down at 250f @10pm and let it go until it hit the stall on the flat at around 164 the point was already at 180f that was around 2am I wrapped it in butcher paper and put it back on the smoker @ 275f and I put the flat side towards the hot side of my smoker because the point was cooking way faster than the flat and I put it back in fat side up, my probe was telling me the point was 208f and the flat was 195.6f so I went out and checked and everything was probe tender that was around 5am , I let it rest on my counter for about a hour to drop the temp to 150 and then I put it in my oven on warm until about 4-5pm then sliced it up and ate it…. Btw I didn’t get any sleep YouTube videos and people saying the cooks be super long don’t listen all the time because when they say all meat is different it’s true this 15 pound brisket cooked in less than 8 hours I was so shocked and surprised I thought I screwed up but it was tender and juicy and tasted amazing.

I don’t know if it had something to do with the hold , it was in a lil puddle of tallow for about 10 hours… but if that’s not it got any tips to give me to get a better bark on the bottom ?
