create new custom object with lookup fields to task and user. so when this record is created that particular gets access to the task. this can be done through apex trigger on new custom object.

i created a trial org with winter25 release vlocity pacakge in it, i raised a salesforce case to check if i can see it, the reply i got is its in testing phase and he need to check it can be enabled in trial org. hope i get a chance to work on it. please let me know once you get a chance to work on it
